Tip of Day: Seasonal Salads

Most Saturday mornings (after my morning run), you will find me sitting at the dining room table with a cup of coffee putting together our meal plan for the week. My focus is on balanced and healthy meals that are tasty and take advantage of the seasonal products.

To help speed up the planning process, I have a few salads (one per season) in my back pocket that I include in couple meals a week.

My Summer “stand by” is Watermelon, Orange & Feta Salad (with Basil sprinkled on top) that works beautifully with many dishes from burgers to grilled fish & seafood.

Tip of the Day: Capture the bounty of summer

I love to make fruit-based blended cocktails year around, but I am not fond of paying upwards of $5 for a pound of frozen peaches. Take advantage of the summer bounty and freeze your favorite for use year around in drinks, desserts, and main dishes.

  1. Buy the desired amount of fruit you want to freeze.
  2. Wash, or peel and slice the fruits, and arrange in a single layer on a parchment-lined rimmed baking sheet.
  3. Place in the freezer for a few hours or overnight.
  4. Transfer the frozen fruits into heavy-duty freezer bag, making sure you get all of the air out.
  5. Seal the bags and place in the coldest part of your freezer.

And then, you have the basis for a wonderfully refreshing cocktail or fabulous dessert when Fall arrives. Here’s how to make one of my favs: Peach Daiquiri.

Put the following in your favorite blender (mine is the Ninja) and enjoy!

  • 2 oz of Silver Rum
  • 1/2 cup of peach juice
  • 1/2 oz of fresh lime juice
  • Ice
  • Optional: Light Agave Nectar (as a sweetener if desired)

I’m asked almost daily by friends, family, and co-workers why I don’t have a blog (and also why don’t open a restaurant). The reason? I love to cook, bake, and entertain, and often share pictures on Facebook which leads to many questions. I love to share recipes, ideas, and approaches I use every day to enjoy life & food.

To many people, meal planning (and sometimes party planning) is something they dread and avoid. To me, it’s fun and something that I enjoy. It’s also the best way to connect with others in a meaningful way. There is nothing quite as rewarding as bringing people together, feeding their bellies & their souls, and creating memories.

By sharing some simple ideas that focus on enjoying life and the people around you, I hope to help inspire you to achieve a happier, healthier, and more fulfilling day-to-day life.
